Sourced from the bottom of the cooler North Eastern slope of the Denton View Hill. The P58 clone comes from the bottom of the hill and is used for the Shed Chardonnays.

Chardonnay kept on skins for 7 days before wild fermenation and full malo before being kept in old barriques until selection for either skins Chardonnay or Ribolla blend.
