2022 Denton Estate Cabernet Sauvignon

VINEYARD
Sourced from Block 2B, high on the warm, north-west-facing slope of Denton View Hill. This part of the vineyard sees maximum sun, allowing Cabernet to ripen fully, while the granite underfoot keeps a firm line of freshness and a mineral edge. The slope and aspect build depth and structure; the elevation reins in the power with precision.
VINIFICATION
The fruit was picked at the end of March. 90% was destemmed, then wild fermented with minimal sulphur additions. Fermentation was left to run its course naturally, with a light touch throughout. The wine was pressed off skins and aged in three 500L puncheons-one of them new-for quiet maturation through the year. It was bottled in late 2023 without fining or filtration.
VINTAGE
A long, mild summer with well-timed rain set things up beautifully, but it took serious work in the vineyard to keep disease pressure and canopy growth in check. Yields were low, but the fruit was concentrated, balanced and full of character.
